GRILLED SALMON WITH COUSCOUS

Ingredients
1 salmon fillet
100g (3½oz) couscous
150ml (5floz) vegetable stock
2tsp olive oil
8 cherry tomatoes, halved
2tbsp coriander, chopped
1 red chilli, chopped
1 lemon
Method
1. Put 100g (3½oz) of couscous into a heatproof bowl and pour over 150ml (5fl oz) of boiling vegetable stock or water
2. Stir, then cover with clingfilm and leave for 10 minutes
3. Meanwhile, heat a griddle pan over a high heat and cook a salmon fillet, skin-side down, for 3 minutes, then turn and cook the other side for 2 minutes
4. Stir the olive oil, cherry tomatoes, coriander, red chilli and the grated zest of 1 lemon into the couscous, season well and serve with the salmon.
